Ingredients

•1 Small Onion, thinly sliced
•2 Extra Large Free Range Eggs
•1 Clove Garlic, crushed
•Coconut Oil
•Paprika to taste
•Salt and pepperOptional Extra
•Serve with some Bacon
•Add a little grated Cheese
•Add a handful of diced Peppers
•Add some fried Sliced Mushrooms

Method

•Crack the Eggs into a clean mixing bowl and whisk well
•Season well with S&P
•Place a heavy Based pan onto a high heat and allow to heat up
•Once hot, add a good dash of Coconut Oil
•Once hot add the onions and quickly fry
•Add the garlic and fry for 10 – 15 seconds
•Add the Eggs
•Move them quickly in the pan until they begin to set
•Then leave and allow for Eggs to cook quickly
•Once cooked fold the omelette in half and serve
•Sprinkle with Paprika
